The apple pancake in many American kitchens is a Dutch baby cousin: eggy batter poured into a hot skillet so the edges puff dramatically in the oven. The name Dutch baby is usually traced to a Seattle restaurant and a corruption of Deutsch, while the apple version keeps the German-American breakfast feeling front and center. It is simpler than a stack of pancakes and showier than toast.
