Buffalo wings became an American bar-food landmark after the Anchor Bar story took hold in 1960s Buffalo: crisp wings, peppery hot sauce, celery, and blue cheese dressing. Air fryers do not replace the original deep-fried tavern version, but they give home cooks a reliable way to render chicken skin and toss wings hot from the basket. The safety rule is nonnegotiable: wings should reach 165 degrees F when checked with a food thermometer.
