Directions

1. Turn Instant Pot to saute mode and heat olive oil.
2. Brown pork chunks in batches until golden on all sides; remove and set aside.
3. Add onion and garlic to the pot; saute until softened.
4. Add cumin, chili powder, oregano, salt, and pepper; stir for 1 minute.
5. Return pork to the pot; pour in orange juice, lime juice, and chicken broth.
6. Add bay leaves, secure the lid, and set pressure cook to high for 40 minutes.
7. Allow natural pressure release for 15 minutes, then quick release remaining pressure.
8. Remove pork; shred with forks and discard bay leaves.
9. Optionally, spread shredded pork on a baking sheet and broil for 5 minutes for crispy edges.
